Zucchini Tempeh Boats
INGREDIENTS
3 medium zucchinis
8 ounce package of tempeh
½ cup vegan cheese (Violife Foods Colby Jack Shreds or Mozzarella Shreds) or you can use non-vegan cheese
1 cup marinara sauce
Spices to taste (sea salt, pepper, garlic powder, onion powder, oregano, basil)
INSTRUCTIONS
Preheat oven to 425 degrees and spray a baking sheet with cooking spray.
Cut zucchini in half lengthwise then place on the baking sheet.
Spray zucchini with extra virgin olive oil cooking spray and add spices then bake for 30-35 minutes.
While the zucchini is in the oven, spray a large skillet with cooking spray.
Crumble the tempeh with your hands and place the crumbled tempeh on a skillet over a medium to high flame for about 6 minutes. Mix around until it starts to turn golden brown.
Add the marinara sauce to the skillet and mix until well combined. Set aside until the zucchini is ready.
Take the zucchini our of the oven and evenly top the zucchini with the tempeh and marinara mixture.
Top the boats with cheese and put back into the oven for 10 minutes then enjoy!
