Vegan Penne Vodka

INGREDIENTS

  • 1 box of bean penne pasta (I use Explore Cuisine Organic Pasta, Banza Chickpea Pasta, or Cybele’s Free to Eat Superfood Veggie Pasta)

  • 1 cup marinara sauce

  • ¼ cup vegan shredded mozzarella (I use Violife Foods Mozzarella Shreds)

  • 1 tablespoon vegan cream cheese (I use Kite Hill Foods Plain Cream Cheese)

  • 1 tablespoon nutritional yeast

  • Spices to taste: himalayan pink salt, pepper, garlic powder, onion powder, oregano, basil

INSTRUCTIONS

  1. Follow the directions on the pasta box to boil the pasta.

  2. After you drain the pasta, toss the pasta back into the pot you just used (easy & limited cleanup) over a low flame.

  3. Add the marinara sauce, shredded cheese, nutritional yeast, and spices to the pot and mix until well combined.

  4. Enjoy this dish that pairs nicely with Baked Eggplant.
