Open-Faced Tofu Spinach Scramble

Recipe developed by my incredible boyfriend, Jacob!


Ingredients

  • 6 oz. firm tofu (I buy from Trader Joe’s)

  • 1 cup spinach (option to add more)

  • 1 slice of ROYO bread (any flavor) — discount code AMANDA10 for 10% off your order!

  • ½ avocado

  • 1 tablespoon nutritional yeast

  • ¼ teaspoon turmeric

  • Spices to taste (garlic, salt, pepper)

Ingredients

  1. Drain and rinse the tofu.

  2. Cut into cubes.

  3. In a small bowl, add the tofu, nutritional yeast, garlic, turmeric, salt, and pepper.

  4. Mash the tofu with a fork until it’s “scrambled”.

  5. Put a slice of ROYO bread in the toaster oven.

  6. Spray a small skillet with cooking spray.

  7. Over low to medium heat, add the tofu and mix for about 2 minutes.

  8. Add the spinach and mix until spinach is wilted.

  9. Next, top the toast with avocado and the tofu spinach scramble. Enjoy!
