Coconut Breakfast Cookies

Ingredients

  • 2 cups rolled oats

  • 3 bananas

  • ¼ teaspoon salt

  • ½ cup creamy peanut butter

  • ½ cup unsweetened coconut flakes

Instructions

  1. Preheat the oven to 350 degrees and spray a baking sheet with cooking spray.

  2. In a large bowl, mash the bananas with a fork.

  3. Add the oats, salt, and peanut butter to the bowl and mix thoroughly.

  4. Fold in the coconut flakes.

  5. Form about 12 small balls and evenly place them on the baking sheets then flatten down a little to form a cookie.

  6. Bake in the oven for 12 minutes.

  7. Let the cookies cool for 10-15 minutes then enjoy!

Serving: 12 cookies
