Edamame & Mung Bean Fettuccine with Marinara

Ingredients

  • 1 box Explore Cuisine Organic Edamame & Mung Bean Fettuccine

  • 1.5 - 2 cups of marinara sauce (amount dependent on how saucy you like it)

  • ½ cup mushrooms, chopped

  • ¼ cup onions, chopped

  • ¼ cup fresh basil

  • 2 tablespoons nutritional yeast*

  • Spices to taste (salt, pepper, onion powder, garlic powder)

Instructions

  1. Spray a large skillet with cooking spray.

  2. Add the chopped onions and mushrooms to the skillet on medium heat until golden brown then set aside.

  3. Follow the directions on the pasta box to boil then drain the pasta once it’s cooked.

  4. Add the pasta to the large skillet and put on low to medium heat.

  5. Add marinara sauce, nutritional yeast, basil, and spices and mix thoroughly until well-combined and hot.

  6. Enjoy this delicious dish that pairs very nicely with the Baked Eggplant.

Serving: 4

*Option to add more nutritional yeast if you want more of a “cheesy” pasta dish.
