Baked Eggplant

Ingredients

  • 1 large eggplant

  • 1 tablespoon extra virgin olive oil

  • Spices to taste (salt, pepper, onion powder, garlic powder, dried oregano, dried basil)

Instructions

  1. Preheat the oven to 425 degrees.

  2. Cut the eggplant in half lengthwise then using the tip of the knife to cut into the eggplant (don’t cut the skin) in lines (vertical then horizontal).

  3. Drizzle olive oil then add spices.

  4. Bake eggplant halves in the oven for 40 minutes.

  5. Let the eggplant cool for 5 minutes. This side dish pairs nicely with the Edamame & Mung Bean Fettuccine with Marinara
