Cheesy Hearts Of Palm Pasta with Marinara & Spinach

INGREDIENTS

  • 1 box or can of Hearts of Palm Pasta (you can purchase on Amazon or at Trader Joe’s)

  • 1 cup spinach

  • 1 tablespoon nutritional yeast

  • ½ cup marinara sauce (I use Rao’s or Thrive Market)

  • ¼ cup mozzarella (I use Violife Vegan Mozzarella)

  • Spices to taste: dried oregano, dried basil, garlic powder, onion powder

INSTRUCTIONS

  1. Rinse the hearts of palm pasta with cold water and drain.

  2. Spray a skillet with cooking spray. Heat skillet over medium heat and add the hearts of palm.

  3. Sauté for 4 minutes and add the spinach.

  4. Sauté for another 2 minutes then reduce the heat to a simmer and add the marinara sauce, nutritional yeast, mozzarella cheese, and spices.

  5. Toss mixture together using tongs and do this until the cheese is melted.

  6. Serve this dish as your main meal or you can split it with someone else and pair it with a protein.
