Banana Pumpkin Baked Oatmeal

Ingredients

  • 2 bananas

  • 2 cups quick oats

  • 2 tablespoons maple syrup

  • 1 cup pumpkin purée

  • 1 tablespoon creamy almond butter

  • ¼ teaspoon pumpkin pie spice*

Instructions

  1. Preheat the oven to 350 degrees and spray an 8x8 baking dish with cooking spray.

  2. In a large bowl mash the bananas with a fork.

  3. Add the quick oats, maple syrup, pumpkin purée, almond butter, and pumpkin pie spice to the bowl and mix thoroughly.

  4. Add the mixture to the baking dish in an even layer.

  5. Bake for 25 minutes then let them cool!

  6. Enjoy this delicious baked oatmeal!

Serving: 12

*If you don’t have pumpkin pie spice then you can just omit this ingredient or use cinnamon instead.
