Avocado Veggie Tuna Salad (Mayo-Free)
Ingredients
5 oz. can (net weight) solid white albacore tuna in water, drained (I get from Trader Joe’s)
¼ avocado
¼ cup shredded carrots
1 tablespoon Dijon mustard
2 teaspoons balsamic vinegar
¼ lemon, juiced
Instructions
Combine tuna, avocado, mustard, balsamic vinegar, and lemon juice in a bowl and mash with a fork.
Fold in carrots.
Put tuna in a wrap, on a piece of bread, or on your salad. Enjoy!
