Avocado Egg Salad (Mayo-Free)

Ingredients

  • 2 hard boiled eggs

  • ¼ avocado

  • 1 tablespoon dijon mustard

  • ½ teaspoon balsamic vinegar

  • ¼ lemon, juiced

Instructions

  1. Mash eggs and avocado with a fork.

  2. Add mustard, balsamic vinegar, and lemon juice and mix thoroughly.

  3. Add any seasonings you like, such as paprika, fresh dill, salt, pepper, garlic powder, onion powder, and everything bagel seasoning.

  4. Enjoy!
