Banana Protein Pancakes
Ingredients
Pancake Batter
1 egg
½ banana, mashed
2 tablespoons vanilla protein powder (I use Nuzest Smooth Vanilla)
2 tablespoons unsweetened almond milk
½ teaspoon baking powder
Optional Pancake Toppings
Almond butter
Pure maple syrup
Cinnamon
Instructions
Mash banana in a large bowl.
Add egg to bowl and whisk with a fork.
Add vanilla protein powder, almond milk, and baking powder to the bowl and mix.
Lightly spray a large nonstick pan with cooking spray and place over medium heat.
Add pancake batter to pan (about 2 spoonfuls at a time) and cook for about 2-3 minutes until tiny bubbles appear around the edges. Flip and cook for 2 minutes more.
Serve pancakes with optional pancake toppings and enjoy!
