Banana Protein Pancakes

Ingredients

Pancake Batter

  • 1 egg

  • ½ banana, mashed

  • 2 tablespoons vanilla protein powder (I use Nuzest Smooth Vanilla)

  • 2 tablespoons unsweetened almond milk

  • ½ teaspoon baking powder

Optional Pancake Toppings

Instructions

  1. Mash banana in a large bowl.

  2. Add egg to bowl and whisk with a fork.

  3. Add vanilla protein powder, almond milk, and baking powder to the bowl and mix.

  4. Lightly spray a large nonstick pan with cooking spray and place over medium heat.

  5. Add pancake batter to pan (about 2 spoonfuls at a time) and cook for about 2-3 minutes until tiny bubbles appear around the edges. Flip and cook for 2 minutes more.

  6. Serve pancakes with optional pancake toppings and enjoy!
