Veggie Pesto Pasta Salad
Ingredients
Pasta Ingredients:
1 cup arugula
1 cup cherry tomatoes
1 kirby cucumber
⅔ cup pitted Kalamata olives
Spices to taste: sea salt, onion powder, garlic powder
Pesto Ingredients:
1 cup basil
⅓ cup extra virgin olive oil
⅓ cup walnuts
2 lemons, juiced
1 tablespoon nutritional yeast
Instructions
Follow the instructions on the box to boil and drain the pasta.
While the pasta is on the stove, add all the pesto ingredients to a blender and blend.
Chop the tomato and cucumber then set aside.
In a large bowl, add the pasta, pesto, arugula, tomatoes, cucumbers, olives, and spices and mix thoroughly.
Put in the fridge until it’s time to serve and enjoy this dish with a group of people. It’s a great dish to have at a BBQ!
