Veggie Pesto Pasta Salad

Ingredients

Pasta Ingredients:

  • 8 oz. box Banza Rotini

  • 1 cup arugula

  • 1 cup cherry tomatoes

  • 1 kirby cucumber

  • ⅔ cup pitted Kalamata olives

  • Spices to taste: sea salt, onion powder, garlic powder

Pesto Ingredients:

  • 1 cup basil

  • ⅓ cup extra virgin olive oil

  • ⅓ cup walnuts

  • 2 lemons, juiced

  • 1 tablespoon nutritional yeast

Instructions

  1. Follow the instructions on the box to boil and drain the pasta.

  2. While the pasta is on the stove, add all the pesto ingredients to a blender and blend.

  3. Chop the tomato and cucumber then set aside.

  4. In a large bowl, add the pasta, pesto, arugula, tomatoes, cucumbers, olives, and spices and mix thoroughly.

  5. Put in the fridge until it’s time to serve and enjoy this dish with a group of people. It’s a great dish to have at a BBQ!
