Sweet Cinnamon Crunchy Chickpeas

Ingredients

  • 15.5 oz can chickpeas (garbanzo beans), strained and rinsed

  • 2 tablespoons pure maple syrup

  • 1 tablespoon extra virgin olive oil

  • ½ teaspoon cinnamon

  • ½ teaspoon monkfruit sweetener* ( I use Lakanto Monkfruit Sweetener)

instructions

  1. Preheat the oven to 425 degrees and spray a baking sheet with cooking spray.

  2. Place the chickpeas in a bowl then add the syrup, olive oil, cinnamon, and monkfruit sweetener then mix well.

  3. Place the mixture on a baking sheet and bake for 25 minutes.

  4. Take the chickpeas out of the oven and toss them around then put the back in the oven for 8-15 minutes. Keep on eye on them to make sure they don’t burn.

  5. Enjoy this delicious sweet snack!

Serving: 3.5

*If you don’t have monkfruit sweetener then you can use regular sugar.
