Plant-Based Sandwich
INGREDIENTS
2 slices of bread (I use Food for Life Baking Ezekiel Bread)
¼ cup hummus (I used Lemon Dill Hummus)
1 tablespoon vegan cream cheese (I typically use Kite Hill Foods)
5 pieces of romaine lettuce
2 slices of tomato
2 slices of cucumber
1 tablespoon Balsamic Dijon Vinaigrette
INSTRUCTIONS
Toast bread then spread hummus on one slice and cream cheese on the other slice.
Add lettuce, tomato, cucumber, and the vinaigrette to one side.
Form a sandwich then cut down the middle and enjoy!
