Nutty Chocolate Chip Cookies

Ingredients

  • 1 cup almond flour

  • ½ cup coconut sugar

  • ½ cup walnuts

  • ½ cup cashews

  • ⅓ cup chocolate chips (I use Enjoy Life Foods Mini Chips)

  • 3 tablespoons warm water

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon ground flaxseed

  • ½ teaspoon baking powder

  • Optional: drizzle of almond butter and sprinkle of sea salt

Instructions

  1. In a small bowl, mix the flaxseed and water then set aside for 10 minutes to create a “flax egg”.

  2. Preheat the oven to 350 degrees and spray 2 baking sheets with cooking spray.

  3. Blend the walnuts and cashews in a blender.

  4. In a large bowl, add the blended nuts, almond flour, coconut sugar, olive oil, baking powder, and the flax egg, then mix thoroughly.

  5. Fold in the chocolate chips.

  6. Form 12 small balls and evenly place them on the baking sheets then flatten down a little to form a cookie.

  7. Bake in the oven for 15 minutes then top with almond butter and sea salt.

  8. Let the cookies cool for 10-15 minutes then enjoy!

Serving: 12 cookies
