Lean Green Pancakes

Ingredients

  • ½ cup rolled oats

  • ½ cup fresh baby spinach

  • ½ banana

  • 2 teaspoons Vital Proteins Matcha Collagen

  • ⅓ cup unsweetened almond milk

  • ¼ teaspoon baking powder

Instructions

  1. Add all ingredients to a blender and blend until everything is well blended.

  2. Lightly spray a large nonstick pan with cooking spray and place over medium heat.

  3. Add pancake batter from the blender to the pan (about 2 spoonfuls at a time) and cook for about 1-2 minutes. Flip and cook for about 30 seconds more.

  4. Serve pancakes with optional pancake toppings (e.g. the other ½ of the banana, maple syrup, and cinnamon) and enjoy!
