Lean Green Pancakes
Ingredients
½ cup rolled oats
½ cup fresh baby spinach
½ banana
2 teaspoons Vital Proteins Matcha Collagen
⅓ cup unsweetened almond milk
¼ teaspoon baking powder
Instructions
Add all ingredients to a blender and blend until everything is well blended.
Lightly spray a large nonstick pan with cooking spray and place over medium heat.
Add pancake batter from the blender to the pan (about 2 spoonfuls at a time) and cook for about 1-2 minutes. Flip and cook for about 30 seconds more.
Serve pancakes with optional pancake toppings (e.g. the other ½ of the banana, maple syrup, and cinnamon) and enjoy!
