Kale Edamame Salad with Lemon Tahini Dressing

Ingredients

  • 2 cups kale

  • ½ cup shelled edamame

  • ¼ - ½ avocado, diced

  • 1 cup mushrooms, diced

  • 1 persian cucumber, diced

  • 2 tablespoons Lemon Tahini Dressing

instructions

  1. In a large bowl, add all ingredients and mix well.

  2. Enjoy as a delicious lunch or dinner for yourself! You could also make this salad as a side dish for your lunch or dinner guests.
