Peanut Butter Banana Brownies

Ingredients

  • 2 bananas

  • 1 cup peanut butter

  • ½ cup coconut sugar

  • ¼ cup oat flour

  • 3 tablespoons warm water

  • 1 tablespoon ground flaxseed

  • 1 cup vegan chocolate chips (I use Enjoy Life Mini Chips)

Instructions

  1. Preheat the oven to 350 degrees and spray the baking dish with cooking spray.

  2. Mix in a small bowl the flaxseed and warm water then set it aside for about 10 minutes.

  3. Mash 2 bananas in a large bowl then add the peanut butter, coconut sugar, oat flour and mix.

  4. Add the flaxseed and water mixture to the big bowl then mix everything together.

  5. Fold in the vegan chocolate chips.

  6. Optional: Slice a banana in half and then slice the half in half. Add the 2 thinner slices to the top.

  7. Bake in the oven for about 30 minutes then keep checking on it until desired consistency. This is a vegan dessert, so you don’t have to worry about over or under cooking. I took it out at about 30 minutes and it was ooey gooey — just the way I like it!
