PB&J Chocolate Cups
Ingredients
1 ½ cups chocolate chips (I use Enjoy Life Foods Mini Chips)
2 teaspoons coconut oil
5 tablespoons peanut butter
5 tablespoons Mixed Berry Zen Basil Jam (you can use any jam if you don’t want to make this one)
Instructions
Melt 1 ¼ cups of chocolate chips with 1 teaspoon of coconut oil.
Fill 5 peanut butter cup molds with the melted chocolate chips (about 2 spoonfuls per mold) then put it in the freezer for 10 minutes.
Place 1 tablespoon of peanut butter in a layer (you don’t have to hit the edges) over the chocolate layer in each mold.
Place 1 tablespoon of jam in a layer over the peanut butter in each mold.
Melt 1 ¼ cups of chocolate with 1 teaspoon of coconut oil.
Top each cup with the melted chocolate (about 2 spoonfuls). If you have extra chocolate — lick the spoon :)
Freeze for about 3 hours then enjoy!
