Oatmeal Raisin Cookies

Ingredients

Dry Ingredients:

  • 2 cups rolled oats

  • 2 cups almond flour

  • ¼ cup coconut sugar

  • 2 teaspoons cinnamon

  • ½ teaspoon salt

  • ½ teaspoon baking soda

Wet Ingredients:

Mix-Ins: ½ cup raisins

Instructions

  1. Preheat the oven to 350 degrees and spray 2 baking sheets with cooking spray.

  2. In a large bowl, mix the dry ingredients then set aside.

  3. Melt the butter in the microwave for 30 seconds.

  4. In a medium bowl, mash the banana.

  5. Add all wet ingredients to the medium bowl and mix thoroughly.

  6. Add the wet ingredients (medium bowl mixture) to the dry ingredients (large bowl mixture) and stir until very well combined.

  7. Fold in the raisins.

  8. Form about 18 small balls and evenly place them on the baking sheets then flatten down a little to form a cookie.

  9. Bake in the oven for 18 minutes.

  10. Let the cookies cool for 10-15 minutes then enjoy!

Serving: 16 - 20 cookies
