Apple Walnut Goji Berry Tuna Salad

Ingredients

  • 5 oz. can (net weight) solid white albacore tuna in water, drained (I get from Trader Joe’s)

  • ¼ cup apple, chopped (I prefer honeycrisp apple)

  • 2 tablespoons mayo (I use Primal Kitchen Vegan Avocado Oil Mayo)

  • 1 tablespoon Dijon mustard

  • 2 tablespoons walnuts, chopped

  • 1 tablespoon goji berries

  • ¼ lemon, juiced

Instructions

  1. Combine tuna, mustard, mayo, and lemon juice in a bowl and mash with a fork.

  2. Fold in the apple, walnuts, goji berries and mix.

  3. Put tuna in a wrap, on a piece of bread, or on your salad. Enjoy!
