Apple Walnut Goji Berry Tuna Salad
Ingredients
5 oz. can (net weight) solid white albacore tuna in water, drained (I get from Trader Joe’s)
¼ cup apple, chopped (I prefer honeycrisp apple)
2 tablespoons mayo (I use Primal Kitchen Vegan Avocado Oil Mayo)
1 tablespoon Dijon mustard
2 tablespoons walnuts, chopped
1 tablespoon goji berries
¼ lemon, juiced
Instructions
Combine tuna, mustard, mayo, and lemon juice in a bowl and mash with a fork.
Fold in the apple, walnuts, goji berries and mix.
Put tuna in a wrap, on a piece of bread, or on your salad. Enjoy!
